Springy noodles are tossed with a creamy sesame and soy dressing that needs no cooking. A quick rinse stops the noodles from softening and makes this especially good chilled.

Instructions

    Cook the noodles in boiling water according to the package directions until just tender.

    Drain the noodles and rinse under cold running water until cool. Shake the colander well so excess water does not dilute the dressing.

    Whisk the sesame paste, soy sauce, vinegar, sesame oil, honey, garlic, and ginger in a large bowl.

    Whisk in cool water 1 tablespoon at a time until the dressing is smooth and loose enough to coat noodles, about 3 tablespoons total.

    Add the noodles, cucumber, and most of the scallions. Toss thoroughly, adding another splash of water if the sauce tightens.

    Serve at room temperature or refrigerate promptly and serve chilled. Add the remaining scallions just before serving.
