Seared chicken simmered in a garlicky cream sauce with sun-dried tomatoes and spinach. It feels special but cooks in one skillet.

Ingredients

  • 1 1/2 lb Boneless chicken breastscut into thin cutlets
  • 1 tsp Kosher salt
  • 1 tsp Italian seasoning
  • 1 tbsp Olive oil
  • 4 cloves Garlicminced
  • 1/2 cup Sun-dried tomatoeschopped
  • 1 cup Heavy cream
  • 1/2 cup Chicken broth
  • 1/2 cup Parmesan cheesegrated
  • 3 cups Baby spinach

  • Tongs
  • Instant-read thermometer

Instructions

    Season chicken with salt and Italian seasoning.

    Heat oil in a large skillet. Sear chicken until golden on both sides, then transfer to a plate.
