Ingredients

  • 1 lb Ground beef80/20 preferred
  • 8 small Flour tortillas
  • 3/4 tsp Kosher salt
  • 1/2 tsp Black pepper
  • 4 slices American cheesehalved
  • 1 1/2 cups Shredded lettuce
  • 1/2 cup Dill pickleschopped
  • 1/2 cup Burger sauce

Equipment

  • Large griddle or cast iron skillet
  • Stiff metal spatula
  • Instant-read thermometer

Instructions

    Divide beef into 8 loose portions and place one portion on each tortilla.

    Press the beef across each tortilla in a thin even layer, leaving a small border.

    Heat the griddle over medium-high heat. Place tortillas beef side down and season with salt and pepper.

    Cook until the beef is browned and reaches 160 F. Flip and add cheese to the hot beef side.
