Quick Pickled Red Onions

A hot vinegar brine softens the bite of thin red onion while preserving its snap and bright color. Fifteen minutes of work makes a sharp, useful topping for tacos, sandwiches, and grain bowls.

- Clean 1-pint jar with lid
- Small saucepan
- Heatproof funnel
Instructions

Pack the sliced onion and oregano into a clean pint jar without crushing them.

Combine the 5% acidity vinegar, water, sugar, and salt in a small saucepan. Bring just to a boil, stirring until dissolved.

Pour the hot brine over the onion to cover it, leaving about 1/2 inch of headspace. Press down any floating slices with a clean utensil.

Cool for no more than 30 minutes, cover, and refrigerate. The onions are ready once chilled, but improve after several hours.

These quick pickles have not been heat processed and are not shelf stable. Keep them at 40 F or colder, use within 2 weeks, and discard them if mold, slime, or an off odor develops.
