Baked Lemon Garlic Salmon

A hot oven cooks lemon and garlic salmon in about 12 minutes. Checking the thickest section with a thermometer is more reliable than judging by color alone.

Heat the oven to 425 F. Line a rimmed baking sheet with parchment.

Pat the salmon dry and set it skin side down on the prepared pan. Check for and remove any remaining pin bones.

Mix the olive oil, garlic, lemon zest, salt, and pepper. Spread the mixture evenly over the top of the salmon.

Bake until the thickest part reaches 145 F, about 10 to 14 minutes for a fillet about 1 inch thick. Begin checking earlier if the fillet is thin.

Let the salmon rest for 2 minutes. Sprinkle with parsley and serve with lemon wedges.

To portion, slide a thin spatula between the flesh and skin and lift each serving away cleanly.
